Instructions for use

Sit the oyster flat-side-up on a level surface and hold firmly by pressing the palm of the hand downwards onto the shell. You may wish to use a rolled-up towel to protect your hand. Position the tip of the knife at the hinge where the two halves of the shell are connected. Carefully but firmly, insert the tip of the blade into the hinge. You may need to apply a bit of pressure to break the seal. Once the knife is inserted, twist the blade to pry the shell open. Keep the blade angled towards the top shell to avoid damaging the meat. After you've created a gap, run the knife around the inside of the top shell, cutting the muscle that attaches the oyster to the shell.
