What’s the difference between honing & re-edging?

Honing a blade gently straightens any microscopic kinks & bumps in the edge that occur during day-to-day use. Regular honing keeps a sharp knife sharper for longer. A sharp knife is a safer knife. If your knife no longer cuts with ease, or you want to bring an old favourite knife back to life, it’s time to re-edge. Re-edging removes material from either side of the blade to recreate the original fine cutting edge.

Re-Edging Stage

When your knife has become blunt you will need to recut the edge using the tungsten carbide re-edging stage. Draw the knife blade through two or three times from heel to tip, keeping the blade vertical at all times. Finish the edge with a few strokes through the honing stage. Wash & dry the knife after sharpening.

Honing Stage

The synthetic diamond coated rods are designed to remove kinks & bumps on the edge that occur during day-to-day use. Draw the blade through from heel to tip 3-5 times, holding it vertically and your edge should stay well honed. With care, the honing tool can also be used to resharpen ceramic knives.

Fine Honing Stage

For regular maintenance of your knives, and for a final polish after re-edging a blade, pull the knife through the ceramic fine honing stage from heel to tip 3-5 times.

Scissors & Serrated Knives

This setting features a triangular ceramic tool which is designed to sharpen one side of the blade at a time. To sharpen right-handed scissors, open them far as they will go and place one blade flat against the left face of the blue-coloured plastic slot, with the edge of the blade against the sharpening tool. The sharpening tool is designed to rotate to “find” the correct grind angle. Pull the scissors through from pinch to point several times. You will notice the edge of the scissor blade appears brighter as material is removed from the edge.

Repeat on the other blade. For left-handed scissors, place the blade against the right-hand wall of the slot.

You can also use this slot to sharpen serrated knives. For broad serrated blades such as bread knives, place the “flat” side of the blade against the blue-coloured plastic, with the ceramic tool in contact with the serrated edge. Pull through 3-5 times to bring the edge back to life. Gently do the same on the other side of the blade to remove any burrs on the edge.
