For a zingy Pesto alla Genovese, pack the container with fresh basil and chop a little. Add approximately 50g of freshly-grated Parmesan, 50g lightly-toasted pine nuts, 1 small peeled clove of garlic, a little salt & pepper and a generous helping of extra virgin olive oil. Blitz in the food chopper to the desired consistency, adding more oil if necessary. Place the lid on the container & this pesto will keep fresh in the refrigerator for up to a week.
